fluffy cupcakes

Hello there!
Today, I would like to share to you another recipe.
Cupcakes!
Cupcakes are ideal for any occasion right? Well, Christmas is fast approaching and I think cupcakes are best to give to your friends, boyfriend and even to your mom’s kumares. You can arrange it to a basket or a box with your message for them. I’m sure they will appreciate it ‘coz you made it personally.

Filling:
2 packs cream cheese
1/3 cup sugar
1 egg
1 cup semisweet chocolate chips

Cupcakes:
1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened baking cocoa
1 tsp. baking soda
1 cup water
1/3 cup vegetable oil
1 tbsp. vinegar
1 tsp. vanilla

1. Heat oven to 350˚F. Place paper baking cups in each of 18 regular-size muffin cups. In small bowl, mix all filling ingredients except chocolate chips until well blended. Stir in chocolate chips; set aside.

2. In large bowl, mix flour, 1 cup sugar, cocoa, baking soda and salt. Beat in remaining cupcake ingredients with electric mixer on medium speed in 2 minutes, scraping bowl occasionally. Divide the batter evenly among muffin cups, filling each half full.

3. Top batter in each cup with 1 rounded tablespoon filling. If desired, in small bowl, mix topping ingredients; sprinkle evenly filling.
4. Bake 20 to 30 minutes or until filling is light golden brown. Cool for 15 minutes; remove from muffin cups. Cool completely, about 30 minutes. Store in the refrigerator.

Note: High altitude (3500-6500 ft.): Heat oven to 375˚F. Increase flour to 1 & ½ cups plus 2 tbsp. Bake 25 to 35 minutes.

You can add toppings to your cupcakes to add more color to it. If you decide to give these cupcakes for Christmas, you can top it with Christmas themed icings. There you go!
I hope you’ll enjoy your cupcakes!
Have a happy tummy!
xoxo.

mouth watery LECHE FLAN!

Hi everyone! Today, I would like to share to you one of our family's favorite. Leche Flan!
Leche Flan is indeed a Filipino favorite. It is present in various Filipino occasions like birthdays, weddings, baptismals and even fiestas. It's creamy and sweet. Ooooohh! It makes me drool.
During Christmas and New Year, we serve Leche Flan because it is sweet and it symbolizes sweet relationship among the family. Leche Flan has a lot of variations like adding peanuts to create a little texture while eating. I think the Classic Leche Flan Recipe is still a great hit among Filipinos.

Ingredients:
12 egg yolks
2 cans condensed milk (14 oz.)
5 cans small evaporated milk
2 cups fine white sugar
2 tablespoon vanilla or
¼ teaspoon grated dayap rind (optional)

You will also need the following:
Llanera
Steamer
Strainer

How to make the Caramelized Syrup :
  • In a stainless steel pan, dissolve 3/4 cups of sugar, add 1/4 cup water over medium heat, do not stir, just swirl the pan gently, caramelize in low heat if you don't want it burnt. Pale brown means sweeter and too dark means bitter. When you have achieved the desired color, pour the syrup in the llanera and make sure to coat all the parts of the pan.
How to make the Custard:
  • In a mixing bowl, combine all the egg yolk, condensed milk, evaporated milk, sugar and vanilla. Use a whisk to mix thoroughly but gently to prevent bubbles from forming. Remove any solids by using a strainer.
  • Pour the mixture in the llanera and cover it with an aluminum foil, so that the moisture from the steam won't come in the pan as it will become watery.
  • Steam Cook for 40-45 minutes, or until knife inserted in the center comes out clean.
  • Remove the llanera and let it cool at room temperature. Then refrigerate for several hours before serving.
  • To unmold the leche flan- run a sharp knife around the edge and carefully invert it unto a platter or serving dish, let the caramelized sugar flow over the leche flan.
This recipes makes 4- 5 llanera of Leche Flan.

Be sure you drink water and brush your teeth after you eat Leche Flan 'coz it's sweet. Your teeth might be too happy and cause you toothache afterwards.
Have a  happy tummy! ^.^

getting started

Dessert.
A delight for your tummy isn't it?
According to wikipedia.com, "Dessert is the usually sweet course that concludes a meal. The food that composes the dessert course includes but is not limited to sweet foods. There is a wide variety of desserts in western cultures now including cakes, cookies, biscuits, gelatins, pastries, ice creams, pies, pudding, and candies. Fruit is also commonly found in dessert courses because of its natural sweetness."

I am one of the many people who likes to eat and cook desserts. It serves as a way of relaxation and bonding for me and my mom. It makes me happy whenever some of my mom's friends appreciate my cooking. In a way, it makes me flatter! Hahahah.
