
Today, I would like to share to you another recipe.
Cupcakes!
Cupcakes are ideal for any occasion right? Well, Christmas is fast approaching and I think cupcakes are best to give to your friends, boyfriend and even to your mom’s kumares. You can arrange it to a basket or a box with your message for them. I’m sure they will appreciate it ‘coz you made it personally.
Filling:
2 packs cream cheese
1/3 cup sugar
1 egg
1 cup semisweet chocolate chips
Cupcakes:
1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened baking cocoa
1 tsp. baking soda
1 cup water
1/3 cup vegetable oil
1 tbsp. vinegar
1 tsp. vanilla
1. Heat oven to 350˚F. Place paper baking cups in each of 18 regular-size muffin cups. In small bowl, mix all filling ingredients except chocolate chips until well blended. Stir in chocolate chips; set aside.
2. In large bowl, mix flour, 1 cup sugar, cocoa, baking soda and salt. Beat in remaining cupcake ingredients with electric mixer on medium speed in 2 minutes, scraping bowl occasionally. Divide the batter evenly among muffin cups, filling each half full.
3. Top batter in each cup with 1 rounded tablespoon filling. If desired, in small bowl, mix topping ingredients; sprinkle evenly filling.
4. Bake 20 to 30 minutes or until
filling is light golden brown. Cool for 15 minutes; remove from muffin cups.
Cool completely, about 30 minutes. Store in the refrigerator.
Note: High altitude (3500-6500 ft.): Heat oven to 375˚F. Increase flour to 1 & ½ cups plus 2 tbsp. Bake 25 to 35 minutes.

You can add
toppings to your cupcakes to add more color to it. If you decide to give these
cupcakes for Christmas, you can top it with Christmas themed icings. There you
go!
